Quinoa Tabbouleh
 
 
Ingredients
  • 1 cup cooked quinoa
  • 1-1/2 cups chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • ½ red onion diced
  • 2 tomatoes diced (I use Roma tomatoes)
  • 2 tablespoons red wine vinegar
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • salt and pepper to taste
Instructions
  1. In a medium bowl mix quinoa, parsley, mint, onion, tomato with vinegar, lemon juice, olive oil, and salt and pepper.
  2. Refrigerate until cold.
