Peanut Butter Chocolate Chip Cookies
Serves: 30 large cookies
  • 1 cup peanut butter
  • 1 cup butter
  • 1 1/4 cups sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoons salt
  • 1/2 teaspoon cinnamon
  • 1-12oz. package mini chocolate chips
  1. Preheat oven to 350°
  2. In a large bowl with a mixer beat peanut butter, butter, with sugar and brown sugar until smooth.
  3. Add in eggs and vanilla, mix on medium until well blended.
  4. Add in flour, baking soda, salt, and cinnamon and mix on medium-low until combined then on medium until completely mixed.
  5. Stir in mini chocolate chips.
  6. Using a large scoop (3 tablespoon size) and place dough two inches apart on parchment-lined baking sheets. Don't overcrowd the dough, these are large cookies and you'll want them to bake evenly.
  7. Bake for 12-14 minutes, the edges of the cookies will be slightly firm, allow cookies to cool on baking sheets completely.
