Lemon Garlic Chicken Thighs
Serves: 8 skewers
  • 3lbs boneless skinless chicken thighs
  • 2 lemons juiced (you'll need at least 1/2 cup lemon juice)
  • 2 tablespoons minced garlic
  • 1 tablespoon olive oil
  • 1/2 teaspoon dry oregano
  • 1/4-1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • optional fresh oregano (you can use this in the marinade and garnish)
  1. Slice chicken thighs into strips to they will skewer easily. I typically cut them into 1 1 /2 inches wide strips.
  2. In a large plastic zipper bag combine all ingredients and let chicken combine with marinade.
  3. Get your pan or grill hot.
  4. Start placing the chicken on the skewers, I put the chicken on the skewers in a "wavy" pattern, alternating the chicken so it won't fall off the skewers as its being cooked.
  5. Cook the chicken and rotate it so it cooks evenly until it reaches 170 degrees,
  6. This chicken is delicious with a salad, over rice or pasta and make a fun appetizer to enjoy with drinks.
