Carrot Cake SMALL RECIPE

Ingredients
  • 1 egg
  • 1/3 cup oil
  • 1 tablespoon vanilla extract
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger
  • 1/2 cup milk
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts
Instructions
  1. In a mixing bowl add eggs, oil, vanilla, and sugar, and mix until combined (you can do this with an electric mixer or by hand with a whisk)
  2. Add in flour, baking powder, baking soda, salt, cinnamon, nutmeg.
  3. Slowly pour in the milk and mix slowly to combine.
  4. Stir in carrots and walnuts until well mixed.
  5. Prepare the baking pan with a good baking spray (not just an oil spray) or grease and flour pan well.
  6. Pour batter into one 8" round pan, or 1 8x4 loaf pan.
  7. Bake at 350° degrees for 25-30 minutes or until a toothpick comes out clean.
  8. Allow cake to cool for 10 minutes, then turn the cake out onto a cooling rack.
  9. Cool completely before icing.
