An easy to make carrot cake recipe that bakes up moist and delicious with a great texture, a classic recipe you'll enjoy for many years.

  • 2 eggs
  • 2/3 cup oil
  • 2 tablespoons vanilla bean paste
  • 2 cups sugar
  • 2 cups flour
  • 2 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1 cup whole milk
  • 2 cups grated carrots (about 3 medium carrots)
  • 1 cup chopped walnuts
  1. Prepare a bundt pan with a good baking spray (not just an oil spray) or grease and flour pan well
  2. In a large mixer bowl, beat eggs, oil, vanilla, and sugar on medium speed until well mixed.
  3. Add in flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. Slowly pour in milk and mix.
  5. Stir in carrots and walnuts until well mixed..
  6. Pour batter into bundt pan.
  7. Bake at 350° degrees for 50-55 minutes or until a toothpick comes out clean.
  8. Allow bundt to cool for 15-20 minutes, then turn the bundt out onto a cooling rack.
  9. Cool completely before icing.
