Corn Black Bean Jalapeno Salsa
- 3 cups frozen corn {thawed in cold water then drained}
- 2 jalapeƱos diced
- 3 tomatoes {Roma, diced}
- 1 15oz can black beans rinsed and drained
- 4 green onions diced
- juice of a lime
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- Combine all ingredients into a bowl and mix well, cover and let rest in the fridge for all the flavors to blend.
