Spinach Artichoke Mashed Potatoes
  • 2 lbs Idaho Russet Potatoes
  • 1 14 oz can artichoke hearts, diced (rinsed and drained) do not use the marinated kind
  • 1/2 onion diced
  • 2 teaspoons garlic paste
  • 2 cups fresh spinach, chopped
  • 1 cup whole milk
  • 3 tablespoons butter, melted
  1. Peel and cut potatoes and cover with water and bring to a boil.
  2. Once all potatoes are tender, drain them.
  3. Put potatoes through a ricer for really smooth potatoes.
  4. With hand mixer beat potatoes with 1 cup whole milk and 3 tablespoons butter.
  5. Mix until creamy.
  6. Stir in artichokes and spinach.
  7. Add salt and pepper to taste.
