a creamy cheesy rice dish with a mushroom and wine sauce with roasted cauliflower.

  • 1 cup Sharp Cheddar Cheese
  • 1 cup long-grain rice
  • 2 cups water
  • 1/2 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons heavy cream or milk
  1. I used a 10 inch cast iron skillet to cook the rice.
  2. Saute one tablespoon butter with 1 cup rice for 1 minute until the rice is all coated and almost getting a white to golden color.
  3. Add 2 cups of water and salt and stir.
  4. Cover and cook for 20 minutes.
  5. Remove from burner and let stand 5 minutes (do not remove lid)
  6. After the 5 minutes, remove the lid and stir milk and the remaining tablespoon of butter into the rice and then add in the cheese, reserving a tablespoon or two for the top.
  7. Mix well and top with reserved cheese and serve.
