Beer Battered Chicken
  • 2 1/2 cups pancake mix
  • 12 oz beer (I used Coors light)
  • 4 boneless skinless chicken breasts
  1. In medium bowl whisk pancake mix with beer
  2. Cut chicken into 2-3 inch pieces
  3. In a medium pan heat oil to 350 degrees (ideally keep oil between 350 and 375 degrees)
  4. Dip chicken into batter then place a few pieces at a time into the hot oil
  5. Cook until chicken reaches an internal temperature of 165 degrees.
  6. Drain on paper towel to absorb excess oil.
