Beer and Cheese Dip
  • 6 oz beer
  • 4 oz cream cheese
  • 1 1/2 cups grated cheddar cheese (I used Kerrygold Dubliner)
  • 1 scallion, diced
  • 1 *jalapeño diced optional
  • 1 tablespoon olive oil
  1. In a medium saucepan on medium high place oil and scallions, {add in jalapeño or some crushed red pepper if you like it spicy)
  2. then add beer and cream cheese and whisk until smooth
  3. add in a cheddar and whisk and return tot heat for a minute
  4. Serve warm for dipping or cold it will easily spread onto crackers
I typically use Coors light beer when making this recipe. The flavor comes through nicely without overpowering the cheese.
