Coffee Scones with Coffee Icing
  • 2 cups flour
  • ¼ cup brown sugar
  • 3 teaspoon baking powder
  • 1 teaspoon salt
  • ½ cup cold unsalted butter
  • ½ cup whole milk
  • 3 tablespoons instant coffee
  • 1 teaspoon vanilla extract
  • 2 eggs
  1. In a medium bowl, mix flour, sugar, baking powder and salt.
  2. Cut in cold butter with a pastry cutter until it resembles coarse crumbs.
  3. Mix milk with coffee until it dissolves and in the vanilla and eggs.
  4. Stir the wet ingredients into the dry ingredients until it's just combined.
  5. Roll out dough onto a lightly floured surface (I roll out the dough onto floured wax paper sheets)
  6. Cut dough into desired shape
  7. Place scones onto parchment lined baking sheet
  8. Bake at 400 degrees for 10 minutes.
  9. Allow scones to cool for a few minutes then apply icing.
