The sandwich pick holds the pickle onto the roast beef and holds it all together, no it does not go into the cracker itself, it sits on top. With the roast beef piled up, it keeps it stable.
These are the sandwich picks I used https://amzn.to/43KrSzJ

I hope they don't get soggy... it'll depend on how humid your fridge is. Next time you can get all the items ready on a piece of wax/parchment paper and refrigerate them then add them to the crackers just before serving. I make and serve immediately when I make them.

Do’ the Triscuit crackers get soggy and loose their crispness if refrigerated?
I made them a couple of hours ahead of my party and poopped them into the refrigerator.
Fingers crossed the crackers don’t get soggy!

Horseradish powder can be purchased by the pound on Amazon.com for a song, I tried this recipe with it and was very pleased! It's April so we're not digging up our horseradish roots just yet, although they are very easy to grow and require zero care, you might try growing some yourself (even in a 5-gallon bucket on a patio will work). Watch out for prepared horseradish in a jar though, since just about all brands have high fructose corn syrup and other very nasty ingredients in them; using horseradish powder or homegrown is more tasty and has far more health benefits than the regular store-bought stuff. Thank you so much for this wonderful recipe, Diane!
