I haven’t, but if you’re accustomed to adjusting recipes for sugar-free baking go right head and tell me how they turn out. If I were to try, I’d probaly use monkfruit, mighht take a couple tries to get the correct portions, but that would be where I’d start.

Not a baker……yet maybe……but I made my first simple cake today for our puppy’s birthday (he passed last year) and I had no idea what I was doing and I found this recipe for easy frosting. And yeah, this was super easy and it’s absolutely delicious. I’ll probably just keep making this going forward and then experimenting as I get better at stuff. But thank you for sharing this recipe to the internet, it is amazing!

baking often won’t brown the meringue but instead melt the ice cream and meringue to a “soupy mess”. You want tho use a hot broiler to brown it from the top or use a kitchen torche.

I have not baked in a convection oven. It is typically suggested that the temperature is reduced by 25 degrees, and bake the same time. Or same temperature, but reduce baking time by 25%. If you’ve baked in the convection oven before, maybe you can do a similar adjustment and see if that works.
