In reply to Melodee. Yes, just don't overmix it. As soon as you see just a trace of flour left, you'll be shutting the mixer off, by the time it stops it'll be done

I haven’t, but if you’re accustomed to adjusting recipes for sugar-free baking go right head and tell me how they turn out. If I were to try, I’d probaly use monkfruit, mighht take a couple tries to get the correct portions, but that would be where I’d start.

I have not baked in a convection oven. It is typically suggested that the temperature is reduced by 25 degrees, and bake the same time. Or same temperature, but reduce baking time by 25%. If you’ve baked in the convection oven before, maybe you can do a similar adjustment and see if that works.
