Hi Meg, The best butter to mix with is room temperature butter, still slightly cold to the touch, but soft enough to press your finger into. (for both the cake and the frosting) I understand you don’t have a mixer, not exactly sure what you mean by beater… a handheld mixer maybe, even if you whip the cake and frosting together with a whisk by hand, the butter should be room temperature. too soft and the cake can be heavy and the frosting will just flop!
