Hi Diane, I made the vanilla cake today for my husband. I baked it in an iron fryer(10 “) like his mom used to bake hers. The cake was outstanding. We both love it. Just the right size for 2 people. He did’nt want an icing, “just plain” he said. He loved it. We are going to try all of the different flavors. God bless you and Thank you.

I’ve made the vanilla, chocolate, brownie, and chocolate chip cakes. All have been delicious & the perfect size when I don’t want a large cake. The chocolate and vanilla cakes I have been made several times 😋all delicious

the difference between an 8″ round cake pan and an 8″ square cake pan is 28cubic inches, which is considerable, it means that the square pan will need 2 cups more batter than the round pan to bake 2″ in height. So the answer is of course you can bake cakes in whatever pan you’d like, just know that the cake in the square pan will be much thinner and may require less baking time as well.

You can easily substitute the sugar with monkfruit or Swerve sugar alternative, but I do not offer nutritional information. You can put all the information into an online nutritional calculator yourself if you need that information. I work hard to offer tried and tested recipes; I am not concerned with the nutritional value of cake. You have a list of all the ingredients, and you can see what goes into the recipe. Feel free to do the calculations.

I do not see nutritional values for any of these cakes. I have tried one of the cakes and it is delicious, BUT, I want to make these cakes for people who are diabetic or on a low carb, diet. Please include the nutrutional values like most all recipes posted on Pintrest. I hate to quit your recipes for this, but, I would have no choice if it cannot see the nutritional values to assess the recipes and adapt as necessary.

Made up the choclate cake last night…
I split it and frosted it with a mint frosting
Great for just the two of us.

all the cakes are linked on the titles (the list is at the bottom of the post after scrolling past 2 collage images) so just click on the title of the cake you want to see, and that will open the page for that particular cake with the recipe. If you need more help let me know, I can send you more information. There is also a recipe index for all my recipes on a desktop it’s a horizontal bar under the name of my blog it says “recipes” if you’re using a mobile phone it’s three dashes, just click those to access the recipe tab.
