Fun, Twice Baked Potatoes

I love potatoes and I love peanut butter and jelly. It was an inevitable combination (to me at least)

The National Potato Board’s Twice Baked Potato Contest is under way.
They are at Potatoes, Taters and Spuds on facebook, 
click on over to cast your vote for your favorite. Hint, Hint** 


I entered my PBJ Potato :) 


The PBJ Potato is like a PBJ sandwich on toasted bread…all warm and delicious.


I baked the potatoes, scooped out most of the potato, mixed it with a few tablespoons peanut butter, put the mixture back into the potato and re-baked them. Topped them off with strawberry jam.
Oh it’s like a whole new level of snacking!


Great potato facts: potatoes are fat, sodium and cholesterol free
                             have nearly half the recommended daily value of vitamin C
                             with the skin on a potato has more potassium than a banana


I will be making them again. Mmmm….comfort food X’s 2.

    I am not a crazy stalker. Maybe I am. But I am obsessed with your site. So glad that we met. I love your photos and your recipes. This looks like it would be sooooo much fun to make for my stepkids. YUM! (I keep sending my friends over here, so hopefully they will serve these to me at their parties.)
