I love taste of grilled and roasted vegetables, every time I see a bunch of asparagus I buy it
I know it will get eaten quick.
I didn’t plan out dinner so when I opened the refrigerator and saw that asparagus, I figured roast it up and add some other items.
Luckily I had chicken, mushrooms, grape tomatoes and rice or it would have been a lean dinner!
I put a tablespoon of olive oil in my pan, roasted up the veggies and chicken. Added salt and pepper. Served it over rice.
