Cilantro and Lime

I love the combination of cilantro and lime so much I decided to make a marinade.
I used one bunch of fresh cilantro chopped, the juice of one lime,
 along with one clove garlic minced,and three chopped scallions.
I added it all to the blender with 1/3 cup olive oil.
I thought it needed a little kick so I added two tablespoons diced green chiles
That’s exactly what it needed.
The smell is so wonderful!
I marinated a flank steak with it for a few hours
Grilled it up and it was so delicious!
 I served it with roasted green beans and cilantro rice (rice with cilantro and scallions).
 I was glad there was extra sauce, it made plenty which is great
 because I think I have an idea for tomorrow nights dinner.
What a great marinade and sauce, I could just about dip anything into it and love it!

    Yummy I can't wait to try this!!! I was thinking I really needed to make something for cinco de mayo. Now I know just exactly what I am going to make but I think I want chicken to night so I will use the marinade with the chicken. This is super beautiful!

    OMG!!!! This was delicious and a total hit with my family. I will be using this recipe over and over! My kids turned up their noses to see the meat swimming in green but once it came off the grill they devoured it. I love the flavor. The meat was reheated the next day for burritos, And I had saved some of the marinade for a sauce. Note that I put some aside for a sauce before marinating my meat in the rest of it. I am so glad I did! We drizzled it on our burritos and we were practically licking the bowl to get to all of it! Thank You, Thank you for sharing!!!
