Chicken for many meals and Chinese Chicken Salad

 I was so happy that I had all the ingredients in my fridge to make Chinese Chicken Salad after finding the photo of the Cabbage one-I didn’t have cabbage, but I had Romaine lettuce and already had a bunch of chicken cooked and shredded in the fridge.
To top it off properly I had purchase these wonton strips and I’m so glad that I did, I didn’t have to get out the wontons and oil and do them myself…like I usually do.
What is Chinese Chicken Salad without the crunch?
The best part is these are FAT FREE!
I couldn’t believe it myself…I hope I’m able to find more, they were perfect.
I purchased other varities and can’t wait to try them too.
I cut the Romaine, julienned a carrot, diced some scallions,
added some dressing the wontons and sesame seeds.
{I love having the dressing on hand in the fridge, I purchase the sesame dressing at Costco and add soy sauce to it.(Feast from the East Sesame Dressing I make it myself too, but love to be able to grab it to top off a quick salad. When Costco didn’t carry it, I actually ordered direct from the company-it tastes just like the one I make-and I haven’t been able to find another like it.}
I try to have chicken ready to go in the fridge, it makes life so much easier, I typically put 6 frozen boneless skinless chicken breasts in my large crock pot, and add water and chicken bouillon, it’s done in a few hours. I can leave the house, and not have to be in the kitchen the entire time it cooks. Since it cooks slow it’s very tender, and ready to be shredded or diced. I often put one or two of the breasts back in the hot broth, turn it off and while it cools I add a couple diced carrots and celery, then it’s quick chicken soup, just boil egg noodles, or heat it the next day and add dumplings. Great way to get more meals and not have to spend so much time in the kitchen. I use the other chicken for tacos, quesadillas, chicken sandwiches, put it over pasta with veggies, the possibilities are endless. Of course Chinese Chicken Salad too.
 Having cooked chicken in the fridge is a time saver :)
On a side note:
It’s heating up here and the roses are blooming!
 YIPPEE!
They are the only flowers I haven’t managed to kill with my black thumb.

    Your salad looks great. I love to try different salads with chicken especially in the summer. Your crock pot chicken is such a great idea. I bet it is so flavorful. I will definitely have to give it a try. Much better than just plain poaching.
